Vegetarian Hummus Burger

This is the second part of  an assignment that I did for my Contemporary Cuisine Class. The “first part” was the post I made about Chickpeas. The idea behind this assignment was to create a healthy burger option with all the condiments. This is what I came up with and created for my class, Enjoy!


5 Ounces canned chick-peas , drained

1 Tablespoon tahini

½ lemon’s juice

Zest of 1 lemon

1 Teaspoon olive oil

1 Tablespoon salt

1/3 Cup quick oats

1 Teaspoon ground cumin

1/4 Onion, minced

2 Cloves garlic, minced

1 Egg, lightly beaten

Ground pepper to taste


Puree chickpeas, tahini, onion, oil, and all spices until a chunky paste results.

Use a bit more lemon juice if necessary.

Stir in egg and oatmeal, mixture should be consistency of ground meat.

Set aside for 10 minutes, this helps the mixture firm.

Form into 2-3 patties.

Grill or broil until browned. (3-5 min per side). I cooked this in the oven to firm it up, I could have grilled it after this point and probably would have added more char and bitter flavor to help round and balance out the flavor profile.

Condiments and Garnishes:

Spicy yogurt sauce:

  • 1 cup Greek yogurt
  • 1 tablespoon Sambal
  • Juice from the other ½ lemon
  • Salt and pepper
  • Fresh mint, finely chopped
  • Fresh parsley, finely chopped

Combine all ingredients together, mix and serve.

Grilled Red Pepper

  • 1 seeded red bell pepper
  • ½ teaspoon oil
  • Salt & Pepper to taste


Toss pepper in oil and salt & pepper.


Cut into strips/ squares

Cornichon Olive Tapenade

  • ¼ cup Cornichon
  • ½ Cup Olives
  • 1 Tablespoon Rosemary
  • ½ Tablespoon Olive Oil
  • Salt & Pepper to taste


Combine all ingredients and blend until it is chunky
