Advanced Culinary Techniques: Farm to Table (December 5-December 25)

Course Description and Rationale: The Advanced Cooking Techniques Class is designed to provide students with the opportunity to learn and apply techniques, presentations and best practices that are more advanced than the fundamental skills learned in previous a la carte classes. Throughout the course students will be challenged to recall and apply fundamental cooking skills with refinement and finesse. Students will be held to a standard that represents our farm to table mission of responsibility and sustainability in all aspects of the course. Through a rotation of responsibilities students will learn a variety of techniques, grounded in proper fundamentals, which demand a higher level of accuracy, attention and refinement than in previous a la carte classes. Students will be expected to use our mission of responsibility and sustainability as a guide to base decisions upon.
