Culture & Cuisine: International Flavors (Taken all of Mod 5)

Course Description and Rationale

World cuisines continue to be an influential component of American cuisine. Ethnic restaurants account for a large percentage of American food sales annually. Recent changes in US relationships with Asia as well as the Middle East increases the need for food service professionals to develop a greater understanding of the cuisines of these areas of the globe. In this course, students will use traditional techniques to produce meals representative of Asia, and the Middle East.  Students will explore specific ingredients and essential characteristics of the selected cuisines to gain a better understanding of the foodways and flavor profiles indicative of Asian/ME cultures. In addition to production students will explore these cultures with field trips to local restaurants and markets.

This course is integrated with the History and Culture
